Snacks and bar bites from the Paraíba table

Carne de sol, rubacão and queijo coalho share the table with iscas, broths and stew in the capital's bars.

The Paraíba bar table draws on sertanejo cuisine. A report by Correio Braziliense, from July 2026, describes carne de sol, which originated in Picuí, as the state's signature dish: lightly salted, cured in a well-ventilated space, and served fried or grilled with manteiga de garrafa (bottled butter), cassava, farofa, vinaigrette and grilled queijo coalho.

The same piece treats rubacão as a creamier, more elaborate version of baião de dois, made with rice and green beans, carne de sol or charque, cubes of queijo coalho and cream or milk. It also mentions stewed free-range chicken (galinha de capoeira), buchada de bode, corn couscous and manteiga de garrafa as pillars of this cuisine. The report recommends looking for traditional versions in inland towns such as Campina Grande, Patos and Sousa.

In João Pessoa's bars, the snack menu appears in simpler terms. In Jornal da Paraíba's September 2023 survey, the venues cited offer chicken iscas, garlic bread, chicken, heart and sausage skewers, broths, seafood, feijoada and goat stew. Dishes vary from venue to venue and from season to season.

Rubacão has also gained fame outside the state. A 2026 report on Comida di Buteco in Rio de Janeiro mentions a bar that reinvented rubacão as a snack, which shows that the Paraíba dish circulates in the national boteco scene. Prices are not mentioned here, because there is no dated, reliable source for them.
