Where to eat regional food in João Pessoa

The capital of Paraíba brings together Northeastern-cuisine restaurants and a recent state policy on gastronomic tourism.
Anyone looking for regional food in João Pessoa finds, in local press guides, a recurring repertoire: cuscuz, carne de sol, tapioca, cartola and rubacão. That is what the Jornal da Paraíba pointed out, in its Qual a Boa section, in a January 2024 survey of ten restaurants in the city, where the cuisine has Northeastern roots and coexists with seafood because of the coastline.
Among the restaurants cited in that guide are Mangai and Tábua de Carne, both without dish details in the article. Mangai belongs to Grupo Maia e Tavares, founded in Paraíba in 1989, and was born in João Pessoa, which remains its main market. According to Paraíba Business, in June 2026 the chain ended its operation in Recife and continues in João Pessoa, Natal and Brasília; the report describes it as a restaurant with an extensive buffet, more than 150 options, a themed bodega and a dessert section. Hours and prices vary and should be confirmed directly with each restaurant.
The subject also became part of official policy. State Law No. 13,491, enacted on December 11, 2024, created the Gastronomic Route of the State of Paraíba, aimed at restaurants, bars, fairs, markets and other establishments that stand out for authenticity and quality, using local ingredients and traditional techniques. According to Paraíba Business, the route links the coast, the Brejo region and the sertão (backlands), and inclusion requires criteria such as quality, authenticity and tourism infrastructure.
In August 2026, the same outlet reported that João Pessoa was named the fifth-largest gastronomic hub in Brazil and that rubacão, recognized in 2025 by the municipality as a cultural and gastronomic heritage, is the dish that best represents the capital among Northeasterners.
